Perched at the top of a hill that overlooks the Santo Stefano Belbo landscape, the San Maurizio monastery was founded in 1619 by the Franciscans who remained there until 1802. Originally coming from Provence, France, these monks imported grape cultivation and wine production into the area. Under the buildings they dug majestic, vaulted wine cellars with brick arches: today home to the Gourmet Restaurant. The Franciscans were followed by the Trappist and Cistercian monks who remained until 1862 when the property was sold to Count Luigi Incisa Beccaria who transformed it into a private home. 

The Exclusive Five Star Relais in Piedmont is one of the few hotels in the world to display a number of unique rooms and suites: each of them is totally different from the others in shape, colours and decors. The 30 rooms and suites have been created in respect of the floorplans of the ancient Monastery and they are equipped with any contemporary comfort and IT devices. Private gardens are the exclusive feature of 10 rooms and suites at the ground floor. SPA and beauty treatments are available in the nearest Salt Cave, a gorge full of salt-water. The large outdoor swimming pool at the top of the hill provides a 360° view of the surrounding landscape.
